GI issues and a phantom sound triggered by a flipper button...

Sounds like a Grounding problem.

Stupid Question #1 - There's a Earth strap that connects from the body, and is fixed to the earth point on the head. Male sure this is connected properly.

Check the connectors throughout the machine - maybe refit all of them..
